I needed to make a dessert in a short time, something fresh and quick but impressive. I had an open pack of amaretti that I absolutely had to use, so I thought of a cold tart with amaretti and coffee! One of those no-bake recipes that are made in a few minutes and loved by everyone. Perfect to serve after dinner to friends, especially in summer, because it’s a tasty but not heavy spoon dessert.

The base is made with crushed amaretti and butter, like a cheesecake, while the filling is creamy and coffee-scented, made from mascarpone, cream, and sugar. If you like, you can also add a sprinkle of cocoa or dark chocolate flakes for an extra touch. It’s a no-bake recipe, ideal even for those with little cooking experience.

Ingredients

  • 1 cup oz whipping vegetable cream
  • 9 oz oz mascarpone
  • 8 oz oz amaretti
  • 5 oz oz butter
  • 2 tsp amaretto (liqueur)
  • 1 tbsp instant coffee

Steps

  • Melt the butter in the microwave or use it softened, pour it into a bowl, add 5 oz of crushed amaretti, 1 teaspoon of liqueur, and mix.

  • Make a layer in a 20-22 cm (8-9 inch) pan lined with paper or foil and place in the freezer.

  • Whip the cream with the mascarpone, coffee, and if you prefer, add a bit of sugar and 1 teaspoon of liqueur.

  • Add 1.7 oz of crushed amaretti and mix well.

  • Pour the creamy mixture on the cold base, use the rest of the amaretti to place around the pan.

  • Decorate with some amaretti crumbs and place in the freezer for a couple of hours.
