This morning, while planning the Sunday menu, I found myself with a pantry full of dry cookies but zero desire to turn on the oven. So I thought: why not make a cold crumble tart with jam? A perfect dessert also for breakfast, snack, or dessert with friends.
It’s one of those recipes that seem complicated but are actually a piece of cake: just grind the cookies, mix with a bit of oil or cream cheese, and then distribute by hand into molds. On top, a generous layer of jam (red fruit, apricot, or whatever you like best), and off to the fridge for a few hours.
The result? A no-bake tart, with a crumbly base and creamy jam, to be cut with your hands. If you want to make it even more delicious, add a touch of shredded coconut, chocolate chips, or fresh fruit pieces. A no-bake dessert that everyone loves, simple and super scenic even in individual portions in silicone molds.

Ingredients
- 10.6 oz cookies
- 1/2 cup butter
- 2.2 cups whipping cream
- 1/4 cup powdered sugar
- 10.6 oz apricot jam
Steps
Chop the cookies in a mixer, add the butter, and blend to get a crumb mixture.
Pour the crumbs into a 8-9 inch cake pan, save a little for final decoration.
Whip the cream with the sugar and pour it over the crumbs, place in the freezer for an hour.
Then add the jam and the remaining crumbs, return to the freezer for another hour and serve.
