The recipe for cold dessert with pavesini ricotta and coconut is very simple, I used a small loaf pan and added a layer of Nutella, but you can also skip it to get a lighter dessert.

Ingredients
- 36 pavesini
- 2 cups ricotta
- 5 tbsp sugar
- 2/3 cup shredded coconut
- 1/3 cup Nutella®
Preparation
Prepare the coffee and let it cool or use milk.
Line a small loaf pan (approx. 2.75 x 8.75 inches) with plastic wrap, dip the cookies one at a time and make 3 rows of 5 slightly overlapping them.
Mix the ricotta with the shredded coconut and sugar, make a first layer on the cookies, dip 6 more cookies and place around.
Fill with a layer of Nutella and more ricotta, then cover with 15 more pavesini.
Place the dessert in the freezer for about half an hour or in the fridge for a couple of hours.
