This cold dessert with pavesini ricotta and coconut is really good, perfect to enjoy at any time, it can be prepared in a few minutes, is soft and creamy, ideal for parties.

The recipe for cold dessert with pavesini ricotta and coconut is very simple, I used a small loaf pan and added a layer of Nutella, but you can also skip it to get a lighter dessert.

Obviously, if you don’t prefer ricotta, you can always use mascarpone or cream and other dry biscuits or coffee or cocoa pavesini.

Ingredients

  • 36 pavesini
  • 2 cups ricotta
  • 5 tbsp sugar
  • 2/3 cup shredded coconut
  • 1/3 cup Nutella®

Preparation

  • Prepare the coffee and let it cool or use milk.

  • Line a small loaf pan (approx. 2.75 x 8.75 inches) with plastic wrap, dip the cookies one at a time and make 3 rows of 5 slightly overlapping them.

  • Mix the ricotta with the shredded coconut and sugar, make a first layer on the cookies, dip 6 more cookies and place around.

  • Fill with a layer of Nutella and more ricotta, then cover with 15 more pavesini.

  • Place the dessert in the freezer for about half an hour or in the fridge for a couple of hours.
