COLD FRUIT CAKES, individual no-bake dessert recipe using leftover fruit salad, ready in minutes, creamy, fresh, and delicious.

I had some leftover fruit salad in the fridge from the night before: strawberries, melon, kiwi, some peaches… it was all beautifully colorful and fragrant, but nobody wanted to eat it as it was anymore. So I had a brilliant idea: to make some cold fruit cakes, no-bake, fresh, quick, and also nice to serve!

Perfect for a summer dinner with guests or to end a meal with something light and delicious. I whipped the cream and mixed it with the fresh fruit cut into small pieces, then filled some half-sphere molds (silicone ones are perfect) and popped them in the freezer for about an hour.

They are perfect as a summer individual dessert, cold fruit cakes, or as a recycling idea when you have leftover fruit salad. A dessert you can prepare in advance and keep ready in the freezer for unexpected guests.

Easy, light, and super fresh: these chilled cream and fruit domes will make a statement even at the end of a meal, perhaps with a sprinkle of grated white chocolate or mint leaves.

Ingredients

  • 14 oz whipping vegetable cream
  • 2 tablespoons powdered sugar
  • 1 oz watermelon
  • 1 oz cantaloupe
  • 1 oz melon
  • 1 oz white grapes
  • 1 oz black grapes
  • 1 oz nectarine

Steps

  • Whip the cream with the vanilla powdered sugar. If you want, add yogurt for a fresher and creamier consistency.

  • Cut the fruit into small cubes, mix with the cream, gently spatulate, and pour everything into half-sphere molds or small glasses and put in the freezer to set for an hour.

  • Serve with caramel or chocolate topping and chopped pistachios.
