If there’s one thing I love in summer, it’s bringing a fresh dessert to the table, without the oven and ready in a few minutes. And so the cold ricotta and Nutella cakes were born: creamy, delicious, and so easy to make they seem like magic.

I had last-minute guests and didn’t want to offer the usual store-bought ice cream. I opened the fridge, found some ricotta, a jar of Nutella and in less than half an hour, ready were some no-bake mini cakes that made both adults and children happy.

The cold ricotta and Nutella cakes are a clever recipe, perfect for those looking for a quick no-bake dessert, ideal to prepare in advance and pull out at the right moment. They’re creamy, lighter compared to many more elaborate desserts and most importantly, super versatile: you can serve them at the end of a meal, as an afternoon treat, or as mini buffet cheesecakes.

Ingredients

  • 2 cups ricotta
  • 3/8 cup chocolate chips
  • 2/5 cup sugar
  • 3.5 tbsp Nutella®
  • 5 cookies (approximately)
  • 1.5 tbsp butter

Steps

  • Blend the cookies with the butter and set aside.

  • Mix the ricotta with the sugar, add the chocolate chips and stir.

  • Pour into molds, I used a semi-sphere mold.

  • Insert a teaspoon of Nutella in the center and cover with crumbs.

  • Put in the freezer for at least an hour.

  • Before serving, decorate with Nutella.
