Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup water
- 2 eggs
- Half packet instant baking powder for savory preparations
- 1 teaspoon salt
- 2 2/3 tablespoons extra virgin olive oil (or vegetable oil)
- 1.8 oz Genovese pesto
- cherry tomatoes
- 3 oz mozzarella
Steps
Pour the eggs into a bowl, add the water and the oil and mix with a whisk by hand.
Gradually add the flour with the baking powder, keep mixing with the whisk, then add the pesto and the salt, stir vigorously.
Place the mixture into a colomba mold for about 300 g (about 10.6 oz), add some cherry tomatoes, a little pesto and a drizzle of oil.
Bake in a preheated oven at 356°F for 35-40 minutes, do the skewer test before removing, or in the air fryer at 347°F for 20 minutes then lower to 338°F for about another 5 minutes.
