Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 egg
- 1/2 cup butter
- 1/2 cup custard
- 2/3 cup ricotta
- 1/4 cup sugar
- as needed lemon zest

Prepare the shortcrust pastry, sift the flour with the baking powder on the work surface and make a well in the center, add the sugar, egg, and butter pieces, knead quickly.
Make a dough ball, wrap it in plastic wrap and place in the fridge for 30 minutes.
After the time has elapsed, take the dough and roll it out on the floured work surface and cut out the cookies with a cutter or a glass, about 20 discs.
Combine the custard with ricotta, mix well and fill half of the cookies, close with the other discs, seal the edges and place them on the baking sheet lined with parchment paper.
Bake in a preheated oven at 350°F for 15 minutes.
