The recipe for chicken and zucchini rolls doesn’t require much explanation, fill the meat with the chosen stuffing then cook it in a pan with a cream of water and flour, a simple and quick roux without butter.
Of course you can use turkey meat if you prefer and cooked ham instead of speck maybe for the kids and for a less salty dish.

Ingredients
- 7 oz chicken breast
- 1.75 oz zucchini
- 1.75 oz speck
- 2.1 oz smoked provola cheese
Preparation
Cut the chicken breast to obtain more or less regular rectangles.
Pound with a meat tenderizer and set aside.
Slice the zucchini with a vegetable peeler and place the slices on the meat, add the speck and cheese in pieces.
Roll, dip in flour, and secure with a toothpick.
Heat a bit of oil in a non-stick pan, place the rolls, and cook with a closed lid turning them over.
Towards the end of cooking, add a bit of water and flour, stir while cooking to prevent lumps.
