Ingredients
- 4 eggs
- 1 cup all-purpose flour
- 1/2 cup sugar
- 2 cups heavy whipping cream
- 1/4 cup coffee
- 1.75 oz white chocolate
- 1.75 oz dark chocolate
- 2 teaspoons vegetable oil
- 1/4 cup milk
Steps
Preheat the oven to 392°F
Beat 2 eggs with 1/4 cup of sugar until fluffy, then gradually add the flour.
Pour the mixture into a baking pan lined with parchment paper and bake for 7 minutes, then remove and let cool.
Beat the other eggs with the remaining sugar and repeat everything.
Cut the sponge cake to a size of 7-8 inches; my cake is 7 inches, but the doses are suitable for a cake of up to 9 inches.
Prepare two coffee makers of coffee and let cool.
Melt the white chocolate with a teaspoon of oil and 1 tablespoon of milk, let cool.
Melt the dark chocolate with a teaspoon of oil and 2 tablespoons of milk, let cool.
Whip the cream and divide it into 3 different bowls, add the white chocolate in one bowl, in another half of the dark chocolate, and in the third 3-4 tablespoons of coffee.
Gently fold.
Place the first sponge cake layer in a pan lined with plastic wrap or in a springform ring, moisten with a mixture of water and coffee.
Fill with a first layer of cream and coffee, cover with another sponge cake layer, moisten, fill with cream and dark chocolate, repeat with the white cream.
Put the cake in the freezer for 1 hour.
Remove the cake from the freezer, cover with the remaining chocolate, if needed thin with a little milk, decorate with chocolate-covered coffee pralines.
Put back in the freezer until serving time, or at least another hour to firm up well.
