CRISPY ONIONS and OLIVES, very tasty recipe, snack to cook in a pan or air fryer, no oven, easy, quick and perfect for summer.
The Crispy onions and olives are an irresistible, simple, and quick snack to prepare at home with very few ingredients. Perfect to serve as an appetizer, in buffets, or to take to the beach as a tasty and light savory alternative.
The crunchy base of the crisps is reminiscent of thin breadsticks or rustic crackers, enriched with sautéed onions and chopped black or green olives for an unmistakable Mediterranean taste. No leavening or special tools needed: just spread, cook, and enjoy!
You can serve them on their own, with creamy cheeses or with light dips like hummus or tzatziki. They also keep well for a few days in a tightly closed bag.

Ingredients
- 3/4 cup all-purpose flour
- 1/2 cup red onion from Tropea
- 3 tbsps black olives
- 1 pinch salt
Steps
Chop the onion into small pieces, I used a small Tropea onion but you can use what you have at home.
Pour the flour with the salt into a bowl, add the onion and the pitted and chopped olives.
Knead well then move to the work surface, divide the dough into 4 parts or 2 if you prefer them larger and roll out on the floured surface.
Obviously, since there are olives, the dough will tend to break.
Oil and heat a pan and place the crisps as they come, even with any holes or tears. (That’s normal)
Cook them until golden, turning them over.
If you prefer, you can bake in the oven at 350°F for about 15 minutes or in the fryer at 375°F for about ten minutes turning them over.
