Delicious and tempting rosemary mother-in-law’s tongues, a recipe that is quick to prepare and great for dinner or as an appetizer, you can’t stop at one, perfect for those who love tasty recipes.
The rosemary mother-in-law’s tongues are a kind of thin, long crackers or sheets, hence the funny name, they are made with yeast but can be made with instant yeast since yeast is scarce these days.
They are soft and crispy at the same time, should be rolled out a lot, and obviously, you can decide the length yourself, great to substitute bread.

Ingredients
- 1 1/2 cups All-purpose flour
- 1/2 cup Water
- 1 tbsp Extra virgin olive oil
- Rosemary
- Oregano
- 1/2 tsp Salt
- 5 g Fresh yeast (or 1 tsp instant yeast)
Preparation
Dissolve the yeast in a bit of water and set aside.
Pour half of the flour into the stand mixer bowl and start the machine with the hook, knead for a few minutes then add the yeast.
Continue kneading and add the other half of the flour, finally the salt and rosemary or oregano.
If the dough is sticky, add a little flour and knead until the dough detaches from the bowl.
Shape into a ball and let it rise in a bowl covered with plastic wrap in the turned-off oven with the light on for about an hour.
After the time has passed, take the dough and fold it like a package, forming a rectangle, bring the short side to the center of the dough and cover with the other half.
Do another round of folds, put back in the bowl to rest for 15 minutes.
After the time, take the dough and divide it into 4 or 8 pieces.
Oil the work surface and stretch the balls with oiled fingers, forming very thin ovals and arrange them on parchment paper.
Oil well, sprinkle with oregano or rosemary, and let rest for 15 minutes.
Preheat the oven to 430°F, then bake for 10-15 minutes.

If using instant yeast, combine flour and yeast, then add water, salt, spices, knead, and let rest covered for 30 minutes, then proceed to stretch and rest for 15 minutes before baking as described above.
P.S. if you don’t have any type of yeast, make the dough with all ingredients and proceed as for instant yeast.
Resting is not mandatory but helps to activate the gluten mesh a bit.
