These crostini with radicchio cream can also be prepared in advance or at least the cream can be prepared and frozen or the bread, toasted and then put in the freezer to defrost when needed.
I used mascarpone because I only had this type of spreadable cheese which is also good for savory dishes, but you can use ricotta.

Ingredients
- 5 slices Baguette
- 6 leaves Radicchio
- 2 slices Speck
- 0.35 oz Mayonnaise
- 1 tbsp Mascarpone
- to taste Pepper
- to taste Salt
Preparation
Thoroughly wash the radicchio leaves, choose the red part and remove the white part.
Put them in a tall pitcher or a mixer.
Add the mascarpone, speck, mayonnaise and blend everything.
Also add a little salt and pepper and check the taste; if it’s too bitter, you can add a bit of sugar.
Cut a small baguette diagonally to get 6 bread slices.
Toast them a bit in the hot oven if you prefer for about ten minutes or under the oven grill at 392°F
Obviously be careful not to burn them.
Spread the cream on the bread, add a little rose made with some speck and serve it with a slice of lemon.
