CRUNCHY SAVORY ZUCCHINI PIE with puff pastry, no oven, quick and easy with ham and provolone, ready in a few minutes.
The other night I came home late, hungry and with very little desire to cook. Opening the fridge, I saw a roll of puff pastry I had bought “just in case”, some zucchinis to use up and the inevitable slices of ham and provolone. And here’s the idea: a savory pie with zucchini, crunchy outside and stringy inside, ready in a few minutes!
This crunchy savory pie is perfect for dinner, to take to the beach, or to serve as an appetizer at buffets. It’s a quick savory recipe, very easy, with simple ingredients as a fridge-saver. The ready-made puff pastry allows you to prepare it in less than half an hour! I quickly sautéed the zucchinis in a pan, but you can also use them raw if you want an even quicker version.
Great even the next day, maybe to take to work or on a trip. The filling is super versatile: I used cooked ham and provolone, but you can substitute them with whatever you have (speck, mozzarella, various cheeses…).

Ingredients
- 2 rolls puff pastry
- 2 zucchinis
- 7 oz cooked ham
- 7 oz provolone
Steps
Place the puff pastry on the work surface.
Grate the zucchinis with a wide hole grater and place them on the pastry, add the cooked ham and provolone pieces.
Close with the other puff pastry, make holes with the fork, and bake in a hot oven at 356°F for 20-25 minutes or cut it into pieces and cook in the air fryer at 356°F for 15 minutes turning it over.
