Ingredients
- 4 cups flour (the one you usually use (about 17.6 oz))
- 1 egg
- 1 egg yolk
- 0.35 oz fresh yeast
- 6.5 tbsp sugar
- 2 tbsp butter ((about 1.06 oz))
- 1 cup milk
- 3 tbsp instant coffee (or 2 small cups of espresso)
- pastry cream (coffee-flavored)
- 2 tbsp instant coffee
- 1 tbsp unsweetened cocoa powder
Steps
If you use moka coffee, subtract its volume from the milk amount; avoid exceeding 1 cup (250 ml) of milk, otherwise the dough will become too soft and hard to handle.
Dissolve the yeast in a little milk, prepare the moka if needed, and let it cool.
Place the flour in a bowl or in the mixer, add the sugar, the instant coffee, the butter cut into pieces, the egg and the yolk, start kneading, add the milk (or milk and coffee), knead well and add the salt.
Work the dough until smooth. Shape a rectangle, fold the short side toward the center and cover with the other short side, form a ball, place it in a bowl and cover with plastic wrap.
Let rest in a warm place — the oven with the oven light on is perfect — until doubled in size. You can prepare the dough in the evening and let it rise overnight.
In the meantime prepare the pastry cream with THIS recipe and add 1 or 2 tablespoons of instant coffee and the cocoa, according to your taste.
Once risen, divide the dough into 14 pieces or 20 pieces, press each piece on the palm of your hand and fill with the cream.
Close forming balls and arrange them in a 9.5-inch (24 cm) pan lined with parchment paper.
Let rest 30 minutes then preheat the oven to 356°F (180°C), bake for 20 minutes. Perform a skewer test to check that it is cooked inside.
