Ingredients
- 18 oz almonds
- 18 oz sugar
- 3 eggs
- 1 packet vanillin
- 3 oz candied fruit
- 3 tbsp apricots, dried
- 2 tbsp water
- food coloring (pink)
- 4.5 oz powdered sugar
- lemon juice
- 3.5 oz dark chocolate 60%
- milk
Steps
Grate the lemon zest without reaching the white part.
Cut the candied fruit.
Chop the almonds without peeling them and combine with the sugar and a bit of cold water.
Add two whole eggs and one yolk, keep the white for the white icing.
Work the mixture and add the vanilla, lemon zest, and candied fruit. Knead for a few more minutes.
Form a dough, take pieces from the mixture, shape into little eggs and coat them with wafers; I omitted them and used rice flour to give them a firm shape.
Place them on a baking sheet and bake at 350°F for about 20 minutes.
Melt the jam with two tablespoons of water and two of sugar.
Prepare the white icing: in a mixer, combine egg white, powdered sugar, and lemon juice then color it with pink coloring.
Prepare the chocolate glaze: melt the chocolate with a few tablespoons of water or milk.
Once baked, let them cool, remove excess wafer parts if used, and brush the surface with the diluted jam.
Cover the sweets with white, pink, and chocolate icing, let dry.
