I was trying some ideas for Easter lunch and had a sheet of puff pastry to finish, so I prepared these EASTER BASKETS single-serving appetizer and they turned out to be truly irresistible little bites. Crispy outside, creamy inside and super quick to make, they are perfect when you want to bring something pretty to the table without spending hours in the kitchen.

Ingredients

  • 1 puff pastry sheet
  • 2 eggs
  • 2/3 cup ricotta
  • 3.5 oz salami (or mixed cured meats)
  • 3 oz provola cheese

Steps

  • Cut the puff pastry with a round cutter — mine is about 4 in — and place the discs into muffin tins.

  • In a bowl combine the ricotta and eggs and mix, then add the salami cut into cubes or a mix of cured meats, mix again and add the provola cut into pieces.

  • Fill the baskets and bake in a preheated oven at 356°F for about 15 minutes.
