- 8 oz custard
- 2 3/4 cups all-purpose flour
- 3/4 cup butter
- 2 eggs
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 lemon zest
Steps
Prepare the custard HERE and let it rest in a wide and shallow bowl with plastic wrap touching the surface, I keep it in the fridge.
Sift the flour with the baking powder onto the work surface and make a well in the center, add the eggs, sugar, grated lemon zest, and butter in pieces.
Quickly knead, shape into a ball, wrap with plastic wrap, and let it rest in the fridge for at least 30 minutes, of course, you can use a food processor for kneading.
After the resting time, take the dough and roll it out on a floured work surface, cut it with an egg-shaped cookie cutter or any Easter cutter like a flower or any Easter shape.
Make a small hole in the center and place the cookies on a baking sheet lined with parchment paper, you should get 12-15 pairs of cookies.
Bake in a preheated oven at 350°F for about 12-13 minutes, remove from oven and let cool.
Fill with cream and pair the cookies, then sprinkle with powdered sugar.
