EASTER RING CAKE with chocolate and Nutella, an easy and quick shortcrust pastry dessert, perfect for using leftover chocolate, great for breakfast or an afternoon snack.

I made this EASTER RING CAKE with chocolate and Nutella during a test afternoon, using leftover chocolate eggs and a bit of Nutella I had in the pantry: in less than half an hour the cake was ready, soft, indulgent and super fragrant. It’s ideal for children but also for a sweet break among adults, and the great thing is you don’t need to be a chef to achieve a perfect result.

If you want to make your EASTER RING CAKE with chocolate and Nutella even more special, you can add chopped hazelnuts on top before baking or brush lightly with a little spreadable cream once cooled. It’s also excellent prepared in advance, as it stays soft and tasty until the next day.

Ingredients

  • 2 cups flour (low-protein (cake) flour, the one you usually use)
  • Half packet baking powder
  • 1 sachet vanillin
  • 1/2 cup sugar
  • 2 eggs
  • 7 tbsp butter
  • 3.5 oz chocolate (chips + bar or whatever you have at home)
  • Nutella® (spreadable cream of your choice)

Steps

  • Pour the flour with the sugar, the baking powder, the vanillin and a pinch of salt into a bowl and mix, add the eggs, stir and then add the butter in pieces.

  • Cut the chocolate into small pieces and add it, together with the chips, to the rest of the ingredients; work the ingredients, move to a lightly floured surface and mix well.

  • Avoid adding too much flour, it should remain soft and a little sticky. When everything is combined shape a rectangle with your hands, about 4 3/4 inches by 12 inches.

  • Spread with Nutella, roll up dusting lightly with a little flour and close into a ring, move it onto parchment paper or into a round pan and bake, cook at 356°F for about 30-35 minutes.

  • Remove from the oven, dust with powdered sugar, slice and serve.
