EASY AND QUICK FILLED CHRISTMAS COOKIES for the Immaculate Conception to make in a short time, delightful recipe perfect also as a Christmas gift, filled with dried fruits and chocolate.
A true delight, these filled Christmas cookies, the Immaculate Conception cookies that kick off the holiday season, were a hit, very simple to prepare and enjoyable to eat, also perfect as a Christmas gift.
The recipe for filled Christmas cookies is very simple, you prepare the shortcrust pastry, cut it, and fill it, nothing difficult, the filling is quick to prepare so in about twenty minutes you will be done.
I didn’t think they would be liked by everyone, maybe it’s because the filling is delicious or because they are rich inside, the aroma of almonds or the taste of chocolate, anyway, they disappeared.
I can only recommend them, you can prepare them for tomorrow.

Preparation
Prepare the shortcrust pastry, pour the flour with the baking powder, sugar, butter, and egg into the mixer.
Mix well and if needed, add a bit of milk.
Take the dough and put it in the fridge wrapped in cling film.
Meanwhile, put the raisins in a bowl with water and rum if you prefer.
Toast the almonds in the oven at 392°F for a few minutes; it’s optional but they will have more flavor.
Chop the almonds with a knife and put them in a bowl.
Add the chocolate chips, cocoa, marmalade, and drained raisins.
Mix well.
Roll out the dough on a floured surface and cut it into 4-inch circles or smaller if you prefer.
Fill half of the circles with the filling leaving a border around.
Fold the dough over the filling and seal the edges with a fork.
Make cuts on the half-moons with a knife and place them on the baking sheet lined with paper.
Pour the egg white with powdered sugar and a few drops of lemon into a mixer, I used the bimby and blend at maximum speed.
Bake the sweets and decorate them with glaze and colored sprinkles.
Bon appétit
