The recipe for pan cookies is a very common shortcrust pastry that you can enrich with flavors like cinnamon, almonds, hazelnuts, cocoa, or coffee, as you prefer, and they cook quickly.

Ingredients
- 1.5 cups all-purpose flour
- 7 tbsp butter
- Half teaspoon baking powder
- lemon zest
- 1/4 cup sugar
Steps
Pour the ingredients into a bowl and work them together like a common shortcrust pastry, wrap it in plastic wrap, and place it in the fridge for 30 minutes.
After the time has passed, take the dough from the fridge and roll it out to a height of 1/5 inch, and cut the cookies with a cookie cutter.
Heat a non-stick pan and cook the cookies for 2-3 minutes on each side, be careful not to burn them, I cooked them without a lid, you can use it but it’s not necessary. Of course, keep an eye on the pan.
Let them cool and sprinkle with powdered sugar if you prefer.
