I had fried quite a bit of eggplant for the parmigiana (who ever makes just a few?), but I had some nice golden, delicious slices left over. I didn’t want to make the usual preparation and the idea came to me: eggplant roll-ups with bacon and provolone!
They immediately became a success: they are prepared in just a few minutes and are crispy outside, stringy inside, perfect to serve as a hot appetizer, quick main, or even for a buffet. I used fried eggplant slices, a piece of provolone and smoked bacon, rolled everything up and skewered it with a toothpick. Ten minutes in the oven… and they’re ready on the table!
You can also cook them in an air fryer or in a pan if you want to avoid turning on the oven. An excellent recipe with leftover eggplant, that saves dinner and conquers everyone with the irresistible aroma of bacon and melted cheese.

Ingredients
- 2 oval black eggplants
- 1 egg
- 14 slices bacon (or pancetta)
- 5 oz provolone
- all-purpose flour
Steps
Slice the eggplants and place them in a bowl sprinkled with salt, put a weight on top and let them rest for at least 30 minutes, then rinse them under running water and squeeze.
Beat the egg in a dish, dip the eggplant slices, then also pass them in the flour and fry them.
Drain on kitchen paper then arrange the bacon slices on a plate and place the eggplant and a piece of provolone on top, roll them up.
Place the roll-ups in a pan or in an air fryer or oven for 5-6 minutes.
