I had some fresh, local fennel in the fridge and very little time to cook, so I thought of these fennel in parchment in the air fryer, a simple, fragrant, and really smart recipe. It prepares in minutes, doesn’t mess up anything, and is perfect when you want to serve something good yet light.

The fennel cooked in parchment remains soft and flavorful, needing nothing more than a drizzle of oil and some herbs. It’s a dish that fits perfectly in the Mediterranean cuisine, ideal if you’re following a vegetarian or vegan diet, naturally gluten and lactose-free, so suitable for everyone.

FOIL-WRAPPED FENNEL in Air Fryer

Ingredients

  • 1 fennel
  • 0.35 oz pine nuts
  • 3 cucunci (or capers)
  • extra virgin olive oil
  • dried oregano
  • rosemary

Steps

  • Clean the fennel, remove the tough parts and cut it into thin wedges.

  • Place it on a sheet of parchment paper (or aluminum foil) add the pine nuts, chopped cucunci or capers, oil, salt, and oregano, a few sprigs of rosemary, drizzle with oil and close the sheet.

  • Seal the parchment leaving a bit of space inside for the steam.

  • Cook in air fryer: 356°F for 18–20 minutes
    Midway through, you can open and reseal the parchment if you want to check on softness; if you like them crunchy, leave it open and cook for 2-3 more minutes.
