Ingredients

  • 2 cups All-purpose flour
  • 1/2 cup Milk
  • 1 pinch Baking soda
  • 2.5 tbsp Lard
  • 1 tsp Salt
  • 7 oz veal strips (veal)
  • to taste Salad
  • 1.5 oz Smoked scamorza cheese

Preparation

  • Flour the veal strips and cook them with a clove of garlic, salt to taste, over medium heat with the lid on, just for a few minutes, they cook quickly.

  • Prepare the flatbread dough, the base of the Romagna flatbread includes lard, for the rolls it’s maybe better to use oil or a little more lard to make the dough more elastic.

  • In a bowl, pour the flour, milk, salt, and lard or oil, mix everything, the dough should not be sticky, let it rest for 30 minutes.

  • They should not be very cooked, they should remain soft, elastic, fill with salad, meat, and slices of scamorza cheese, roll them up and wrap them in cling film or parchment paper for a while.

  • Take the flatbread rolls and cut them into 3 pieces, heat them in the pan with a closed lid, just long enough to melt the cheese.
