The zucchini and ham flatbread saved my dinner, I had no ideas, I opened the fridge, found zucchinis to use, and thought to make a quick pastry and fill it in 10 minutes.
Vegetables, cold cuts, and cheeses are never missing in my fridge, I cooked a bit of zucchini in the fryer while I kneaded and spread the pastry, then I filled the flatbread with zucchini and ham and cooked it for about 20 minutes; it was gone immediately, crispy and delicious.

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup water
- 3 1/2 tbsps extra virgin olive oil
- 5 oz zucchini
- 2.8 oz provola cheese
- 3.5 oz ham
Steps
Pour the flour into a bowl, add water, oil and a pinch of salt, mix the ingredients well, then move to the work surface.
Cut the zucchini into chunks and cook in a pan or air fryer at 375°F for 10-15 minutes.
Divide the dough in half, roll out thinly, and fill with zucchini, ham, raw or cooked, as you prefer, provola cheese, and close with the other dough sheet.
Seal the edges, oil and cook in the fryer at 375°F for 15-18 minutes turning it, in the oven at 350°F for 20-25 minutes, or in a pan for about 15 minutes turning it.
