Ingredients

  • 1 fennel
  • 0.35 oz pine nuts
  • 3 cucunci (or capers)
  • extra virgin olive oil
  • dried oregano
  • rosemary

Steps

  • Clean the fennel, remove the hard parts, and slice it into thin wedges.

  • Place it on a sheet of parchment paper (or aluminum foil), add the pine nuts, chopped cucunci or capers, oil, salt, oregano, a few sprigs of rosemary, drizzle with oil and seal the paper.

  • Seal the foil packet leaving some space inside for steam.

  • Cook in air fryer: 356°F for 18–20 minutes
    Halfway through cooking, you can open and close the packet if you want to check the tenderness; if you prefer them crispy, leave it open and cook for 2–3 more minutes.
