Ingredients

  • 2 cups all-purpose flour
  • 2 cups cake flour
  • 2 tsp fresh yeast
  • Half teaspoon salt
  • 1 1/4 cups water
  • as needed tomato sauce
  • 10.5 oz buffalo mozzarella DOP

Steps

  • Dissolve the yeast in the water then pour the flour into a bowl and add the water a little at a time, mix well, add the salt and finish kneading.

  • Do a round of folds, that is, make a rectangle, bring the short side towards the center and cover with the other short side then make a ball and set aside to rest in a bowl for about 3 hours covered with plastic wrap.

  • After the time has passed take the dough and divide it into 5-6 pieces and roll them out forming small pizzas, fill with tomato sauce and well-drained pieces of mozzarella.

  • Close halfway, seal the edges, heat the oil in a high pan and fry the panzerotti turning them for about 3-4 minutes for each panzerotto.

  • Drain on kitchen paper and serve.
