The gubana in Slovenian dialect or gubanca is a typical festive dessert, filled with almonds, walnuts, pine nuts, and candied fruit, there is also a version with amaretti which I made because I love their aroma.
I didn’t know the gubana recipe, I happened to hear about it and immediately started searching, it’s a delicious leavened dessert, very simple to prepare with a rich and delicious filling, the typical festive dessert.
Perfect for Christmas but it seems to be made for weddings as well, scented with brandy and rich in dried fruit.

Ingredients
- 0.28 oz fresh yeast
- 1.35 tbsp milk
- 1 tbsp all-purpose flour
- 1 tbsp brandy
- 1.5 cups all-purpose flour
- orange zest
- lemon zest
- 0.63 cups sugar
- 1 pinch salt
- 2 tbsp butter (melted)
- 1 egg yolk
- 1 egg white
- 0.7 oz almonds
- 2.47 oz walnuts
- 0.53 oz candied citron
- 0.53 oz candied orange zest
- 1.41 oz raisins
- 1 tbsp breadcrumbs
- 1 knob butter
- 1 egg yolk
Steps
N.B. here is the recipe as it should be traditionally made, and a quicker version, I forgot to brush with egg yolk.
Prepare a starter with yeast, milk, and flour, mix the ingredients in a glass and let it rest covered with a kitchen cloth for about an hour.
Grate the zest of a lemon and an orange.
After the time has passed, pour the starter into the mixer or a bowl, add the flour, citrus zests, sugar, a pinch of salt, and melted butter.
Start working the dough then add 1 egg yolk and 1/2 beaten egg white, reserve the other half, finish working the dough and let it rise for 1 hour covered.
After the time, add 1 tablespoon of brandy to the dough and an egg yolk, work it and set aside.
Coarsely chop the almonds, walnuts, candied citron, and candied orange zest.
Place the raisins in a bowl with a tablespoon of white wine.
Toast 1 tablespoon of breadcrumbs with a knob of butter.
Pour the dried fruit, candied fruit, breadcrumbs, the other half of the egg white, and 1 egg yolk into a bowl, mix everything.
Take the dough, roll it thin, form a rectangle, and fill with the filling, roll it up and close forming a spiral, let it rise for 2 hours.
Once risen, turn on the oven to 356°F
Brush with an egg yolk and sprinkle with sugar, bake for about 30 minutes, check the oven.
Quick version of the dessert, the one I made:
Prepare the starter as above at step 1
Once risen, pour it into the mixer with citrus zests, 1 whole egg, without beating the egg white, the flour, butter, and citrus zest
Once risen, roll out the dough.
I did not use candied fruit and breadcrumbs, I replaced them with 200 g of coarsely chopped amaretti.
Pour the dried fruit and amaretti into a bowl and add an egg, mix with a spoon, pour the mixture on the rolled-out base and proceed as above.
