Ingredients

  • 10.5 oz dry biscuits
  • 7 tbsp butter
  • 1 cup cooking cream (not for desserts)
  • 1 egg yolk
  • 1.25 cups sugar
  • 7 oz dark chocolate
  • 2/3 cup whipping cream

Steps

For a mold of about 8 inches for 6-8 people (it’s very caloric)

  • Melt the chocolate in a double boiler and add 2/3 cup of cream, mix well and set aside.

  • Work the butter with the egg yolk and sugar into a cream then add the cream and work again until everything is combined.

  • Soak the biscuits in milk and place them on the bottom of a preferably springform pan lined with parchment paper and also around the edge.

  • Pour a layer of buttercream, cover with a layer of biscuits, and so on until the ingredients are used up, ending with the last layer which should be just cream.

  • I made 3 layers, adjust with the biscuits, it also depends on the size of the biscuits you use, if they are larger or smaller the quantity may vary.

  • Finally, pour the melted chocolate and keep in the freezer for 30 minutes if you consume immediately or in the refrigerator for a couple of hours.
