GORGONZOLA AND PEAR MINI PIZZAS
Tips from an Improvised Chef
The gorgonzola should be soft but not liquid: this way it melts on the mini pizzas without making a mess.
The pears should be sliced thin, preferably a bit firm: this way they stay crunchy when cooked and don’t turn into mush.
Crispy bacon is always added last: the hot/cold contrast is amazing.
If you want to add an extra Christmas touch, try sprinkling some chopped rosemary or a few drops of honey: guaranteed wow effect.

Yes, if you want to experiment: sweet gorgonzola, robiola, or taleggio are all perfect alternatives.
