Some gorgonzola, a few juicy pears, crispy bacon, and a handful of walnuts. And I thought: “Why not make some gourmet mini pizzas, just like that, on the fly!”

Ingredients
- 3/4 cup flour (the one you usually use)
- 2 tsp extra virgin olive oil
- 3 1/3 tbsp water
- 1 pinch salt
- 1 pear
- 2.1 oz bacon
- 1.8 oz gorgonzola
- pepper
- 6 walnuts
Steps
Pour the flour into a bowl with the salt; if you prefer, you can add instant yeast, water, and oil, and mix well.
Roll out the dough and cut out 7 mini pizzas with a 2 3/4 inch cutter; cook in a greased pan or in the oven at 350°F for about ten minutes.
Spread the cheese on the mini pizzas, cut the pear into pieces, and top the mini pizzas.
Cook the bacon until crispy and place it on the mini pizzas; add crumbled walnuts, a sprinkle of pepper, and some rosemary.

Tips from an impromptu chef
The gorgonzola should be soft but not runny: this way it melts on the mini pizzas without making a mess.
