The recipe is very simple, it’s a cake made without any electric mixer, by hand with a spoon, full of fruit, this Grandma Elena’s apple cake has a very soft dough.

It was my father’s favorite dessert, he only liked the one made by grandma, his mother-in-law, rightly so, it’s really very good, try it and you’ll see.

Grandma Elena's Soft Apple Cake

Ingredients

  • 4 Eggs
  • 4 tablespoons Sugar
  • 1 kg Apples (Delicious)
  • 1 1/4 cup Sunflower Seed Oil
  • Lemon Juice
  • 1 cup Milk
  • Baking Powder
  • 2 1/2 cups All-Purpose Flour
  • 1/4 cup Liquor

Preparation

  • Peel and slice the apples, not too thick, and place them in a bowl.

  • Drizzle them with lemon juice and sprinkle with sugar.

  • Beat the eggs with the sugar in a bowl with a spoon or hand whisk.

  • Mix well to dissolve the sugar then add the lemon zest, oil, milk, and liquor as desired.

  • Add the flour and mix well.

  • Let everything blend and finally add the apples, including any juice that may have formed during rest.

  • Butter and flour a 9-inch round pan and pour everything in.

  • Bake in a preheated oven at 350°F for about 1 hour, always perform the toothpick test before removing from the oven.
