For Carnival, I wanted something savory, quick, and super comforting, so I made the grandma’s rustic fritters with Parmesan again. The ones that fill the kitchen with aroma while frying and disappear as soon as they hit the table. They are an easy savory recipe, made with few ingredients and truly ready in five minutes.
These Parmesan fritters are crispy outside and soft inside, perfect as a tasty appetizer, aperitif or party finger food. Everyone loves them, both adults and children, and they are ideal when you want to bring something good without spending hours in the kitchen.
I often make them even outside of the Carnival period because the quick rustic fritters are always a good idea: perfectly bubbly, tasty, and irresistible. One leads to another, you’ve been warned.

Ingredients
- 2 cups flour (the one you usually use)
- 0.5 cup water
- 1.4 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 2 tbsps grated Parmesan cheese
- 1 pinch salt
Steps
Pour the flour into a bowl, add the Parmesan, salt, oil, water, mix and then add the water again.
Knead well, move to the work surface, and continue kneading well. If needed, add a bit of flour until it no longer sticks to your hands.
Divide the dough into 7 pieces, roll them out thin on the work surface.
Heat plenty of oil in a pan and cook the fritters, turning them over.
Drain on kitchen paper and serve with a sprinkle of oregano or Parmesan cheese.
