Ingredients
- 1 cucumber
- 6 Cherry tomatoes
- 1 red bell pepper
- 1 yellow bell pepper
- 1 clove garlic
- 1 Tropea red onion
- 5.3 oz cooked chickpeas
- 3.5 oz feta cheese
- to taste oregano
- to taste parsley
- 1 bunch arugula
- to taste extra virgin olive oil
- to taste pepper
- to taste salt
Preparation
Wash the bell peppers and remove the inner white part with the seeds then cut them into small cubes.
Peel the cucumber with a peeler and cut it into cubes, also cut the cherry tomatoes and put everything in a salad bowl.
Add the chopped onion, also in small pieces, wash and add the arugula, the chickpeas, washed and drained, and the olives.
In a bowl, prepare the dressing, put the vinegar, honey, garlic, pepper, salt, and oregano, and mix well.
