My quick individual savory panettone was a real novelty on the web, so much so that it has been remade countless times, even the mini panettones have had their importance as well.
The recipe for the quick mini savory panettone is very simple, you make the dough by hand mixing the ingredients in a bowl, nothing simpler.
I filled them with speck and provola cheese, but you can fill them as you prefer or with what you have at home, they are excellent with ham or tuna.

Ingredients
- 4 eggs
- 1/4 cup extra virgin olive oil
- 1 1/2 cups milk
- 2 3/4 cups all-purpose flour
- Half packet instant yeast for savory preparations
- 1 teaspoon salt
- to taste arugula
- 3.5 oz speck
- 1/3 cup mayonnaise
Steps
Pour the eggs and water into a bowl, mix with a hand whisk, also add the oil and work a little.
Combine the flour with the yeast a little at a time, always mixing with a spoon, if you like, add some oregano, it’s optional.
Pour the mixture into mini panettone molds, 4 inches high, they should be of 5 fl oz.
Bake in the hot oven at 350°F for about 25 minutes, do a toothpick test before removing from the oven, if needed, extend the cooking time.
Remove from the oven, let cool and slice, spread with mayonnaise then fill with speck and arugula in each layer as is done for the typical savory panettone.
