Ingredients

  • 4 cups flour (the one you usually use)
  • 3.5 oz sourdough (or 0.2 oz of fresh yeast)
  • 1/3 cup butter
  • 1/3 cup sugar
  • 3.5 tbsp orange juice
  • 7 oz milk
  • orange zest
  • orange marmalade
  • 2 egg yolks

Steps

  • Dissolve the yeast in the milk.

  • Pour the flour into a bowl, add the sugar, butter, and orange zest.

  • Start kneading and add the egg yolks.

  • Add the orange juice, as you knead if necessary add a little flour.

  • The dough should not be sticky, make a ball, place it in a bowl, cover with plastic wrap and let it rise overnight, until it doubles.

  • After rising, take the dough, roll it out and fill it with the marmalade, roll it up and place it in a plumcake mold.

  • Let it rise for about an hour then preheat the oven to 180°F, bake for 20 minutes, do the toothpick test and if necessary extend the cooking time a bit.
