Ingredients
- 2 eggs
- 3.5 oz sugar
- 1.5 cups all-purpose flour
- 1/2 packet baking powder
- 1 lemon
- 2 tbsp milk
- 2 tbsp vegetable oil
Steps
Beat the egg yolks with the sugar until they double in volume and set aside.
Whip the egg whites with a pinch of salt then add them to the yolks and mix with a spatula from bottom to top.
Add the flour with the baking powder a little at a time, always folding from bottom to top.
Add the milk, oil, lemon zest, and juice, mix with the spatula to blend everything, then pour the mixture into a 8-inch buttered and floured bundt pan.
Bake in a preheated oven at 350°F for 25-30 minutes, test with a skewer before removing from the oven.
