Ingredients

  • 2 egg yolks
  • 1/4 cup sugar
  • 1/4 cup cornstarch
  • 1 lemon zest
  • 2/3 cup milk
  • 1 cup vegetable whipping cream

Steps

  • Place the egg yolks in a small pan, add the sugar and beat a little with the hand whisk.

  • Add the cornstarch and continue working with the whisk.

  • Combine the milk with 1/2 cup of cream and keep working, then move to the stove.

  • Add the whole lemon zest, only the yellow part and always stir until it thickens, it only takes a few minutes.

  • Keep in mind that the lemon will cause lumps, meaning the cream will not be as smooth as the classic pastry cream, remove from the pan and let cool.

  • When the cream is cold, whip the remaining cream and combine the two mixtures, I used an immersion blender, store in the fridge until its use, it keeps for about 3 days.
