Ingredients

  • 2 egg yolks
  • 1.8 oz sugar
  • 1.8 oz cornstarch
  • 1 lemon zest
  • 5/8 cup milk
  • 1 cup vegetable whipping cream

Steps

  • Place the egg yolks in a saucepan, add the sugar and whisk a little by hand.

  • Add the cornstarch and continue whisking.

  • Mix the milk with 3.3 oz of cream and continue working, then move to the stovetop.

  • Add the zest of a whole lemon, only the yellow part, and keep stirring until it thickens, it takes a few minutes.

  • Keep in mind that the lemon will cause lumps, meaning the cream won’t be as smooth as the classic pastry cream, remove from the saucepan and let it cool.

  • When the cream is cold, whip the cream and combine the two mixtures. I worked everything with an immersion blender, store in the fridge until use, it keeps for about 3 days.
