Thus these lemon fritters with mascarpone were born, an easy but clever idea, perfect for those who love Carnival sweets but want to change a bit.
These fritters without butter are light in the dough but super delicious in the result. The mascarpone makes the dough softer, the lemon gives fragrance and freshness, and the result is fried fritters that are crispy, not greasy, and remain good even after a few hours. It’s a quick and easy recipe, ideal when you have little time but still want to prepare a homemade dessert.

Ingredients
- 3/4 cup flour (the one you usually use)
- 1/4 cup mascarpone
- 1 lemon
- 1 tbsp extra virgin olive oil
- 1/2 tsp baking soda
- peanut oil
Steps
Pour the flour into a bowl, add the mascarpone, baking soda or baking powder, the oil and mix.
Add the grated lemon zest and juice, knead well, if needed add a bit more flour, just enough to keep it from sticking to your hands.
Roll out the dough on the board into a thin sheet and cut it with a fluted wheel, you can always use a pasta machine if you prefer.
Heat the oil in a tall pot, place a small piece of dough inside, when it sizzles, it’s ready.
If you rolled by hand, I suggest rolling each fritter again quickly with the rolling pin, place a few fritters at a time in the oil and fry, turning them over, for only a few minutes.
Drain on kitchen paper and dust with powdered sugar.
