Ingredients

  • 1 cup cups whipping cream
  • 1/2 cup cups mascarpone
  • 60 Pavesini cookies
  • to taste lemon paste

Steps

  • Prepare the lemon paste, it’s very quick and takes 10 minutes, and keep it in the freezer.

  • Line a mold with plastic wrap. I used a simple plastic container, and it took me 5 packs of Pavesini cookies.

  • Arrange the Pavesini cookies at the bottom and around the mold; I slightly overlapped them.

  • Grind the zest of half a lemon with 1 tablespoon of sugar.

  • Whip the cream with the mascarpone and lemon zest.

  • Pour half into the mold, add the lemon paste in the center, cover with the other half of the mousse, and finally cover with the Pavesini cookies.

  • Place in the freezer for at least 30-40 minutes.
