I discovered lentil meatballs, I had never made them, and I must say they are really very good, they can be prepared in a short time even with pre-cooked lentils, ideal for both lunch and dinner.

The recipe for lentil meatballs in an air fryer is very simple, once the lentils are cooked and cooled, blend them a bit, add all the ingredients, form the balls to cook, and they are really tasty, they were very well received.

Ingredients

  • 3/4 cup dry lentils (or 1 cup of cooked lentils)
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic
  • 1/2 cup zucchini

Steps

  • Boil the lentils if using dry, cook for 20-30 minutes then let cool and pour them into a bowl.

  • Add salt, the egg, and blend with an immersion blender or regular blender, just a few pulses, then add the Parmesan, breadcrumbs, minced garlic if you like, and parsley or other spices to taste.

  • Finally, add the zucchini cut into small pieces, mix well and form the meatballs, place them in the air fryer basket and cook at 340°F for 8 minutes, turn and cook for another 2 minutes.

  • Alternatively, bake in the oven at 355°F for 15-20 minutes or in a pan.
