I had some strawberries to use and no butter at home, so I improvised this LIGHT STRAWBERRY TART with jam… and I’ll tell you right away it was a game changer 😄 Soft, lemon-scented and much lighter than the classic tart, yet still super indulgent.

The great thing about the LIGHT STRAWBERRY TART with jam is the oil-based shortcrust: it comes together in no time, doesn’t need waiting and still stays soft and crisp. Perfect for breakfast, snack time or when you want a homemade dessert that’s simple but lighter, without giving up flavor.

Ingredients

  • 2 1/3 cups pastry flour (soft for desserts, the one you usually use)
  • 7 tbsp extra-virgin olive oil
  • 1/2 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 pinch salt
  • 1 tsp baking powder
  • lemon zest
  • 2 cups strawberries
  • 2 cups strawberries
  • 1 1/4 cups strawberry jam (light)

Steps

  • Mix the flour, sugar and salt, add the oil, the eggs and the lemon zest. Quickly knead until you obtain a smooth dough ball. Wrap and let rest in the fridge for 30 minutes.

  • Wash and cut the strawberries into pieces, season them with sugar and lemon juice, let them macerate for about 10–15 minutes.

  • Roll out about 2/3 of the dough and line a buttered pan, spread an even layer of jam, add the strawberries and use the remaining dough to create the classic lattice strips.

  • Bake for 35–40 minutes until golden, static oven at 356°F
