Ingredients
- 2 1/3 cups pastry flour (soft for desserts, the one you usually use)
- 7 tbsp extra-virgin olive oil
- 1/2 cup sugar
- 1 egg
- 1 egg yolk
- 1 pinch salt
- 1 tsp baking powder

- 2 cups strawberries
- 2 cups strawberries
- 1 1/4 cups strawberry jam (light)
Steps
Mix the flour, sugar and salt, add the oil, the eggs and the lemon zest. Quickly knead until you obtain a smooth dough ball. Wrap and let rest in the fridge for 30 minutes.

Wash and cut the strawberries into pieces, season them with sugar and lemon juice, let them macerate for about 10–15 minutes.
Roll out about 2/3 of the dough and line a buttered pan, spread an even layer of jam, add the strawberries and use the remaining dough to create the classic lattice strips.
Bake for 35–40 minutes until golden, static oven at 356°F
