Super good, the mandarin cake doughnut is really delicious, fragrant, soft, and without butter, the perfect cake for breakfast or snack for adults and kids.
The perfect cake for those who love a good breakfast with seasonal fruit, in this case, mandarins but oranges or lemons are also great.
It’s very fragrant, soft, melts in the mouth, I eliminated the butter and replaced it with oil and milk like a typical doughnut varying a bit the original Sicilian recipe HERE which instead includes butter and no milk.
The mandarin cake doughnut is therefore very simple, a typical Sicilian recipe that involves having thoroughly blended mandarins inside, including the peel obviously only the outer part, never the white part because it is bitter.
Then all the other ingredients are mixed and baked, simple, fast, and good and without butter, it’s also lighter.
At my house, they love it a lot and I adore it because I don’t have to stand there preparing ten thousand things for a breakfast cake.

Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/4 cups sugar
- 3 eggs
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1 packet baking powder
- 3 mandarins
Preparation
Remove the peel from the mandarin with a peeler avoiding the white part and put it in a blender.
Add a couple of tablespoons of sugar from the total then remove the seeds from the mandarins and add them to the other ingredients, blend everything.
Beat the eggs with the sugar until foamy with electric beaters then add the sifted flour with the baking powder a little at a time alternating with the milk and oil.
Finally add the blended mix, mix well, butter and flour a doughnut mold of 1 lb and pour the mixture.
Bake in a preheated oven at 350°F (ventilated) for 30-40 minutes, always do a toothpick test before turning off.
Remove from the oven, let cool, remove from the mold, sprinkle with powdered sugar.
