To prepare the mandarin chiacchiere, you need a few simple ingredients: flour, eggs, sugar, mandarins, powdered sugar, and oil for frying. Start by mixing the flour with the eggs and sugar until you get a soft and smooth dough. Then, add the juice and grated zest of the mandarins, mixing well until you obtain a homogeneous dough.

Ingredients

  • 7 oz all-purpose flour
  • 1 egg
  • Half teaspoon baking powder
  • 3.4 tbsp water
  • 2.7 tbsp mandarin juice
  • as needed mandarin zest
  • 1 pinch salt

Steps

  • Pour the flour into a large bowl or the food processor, add the baking powder, the grated zest of a mandarin or half, it is very fragrant, the salt, and start kneading.

  • Gradually add the mandarin juice and water and orange juice until the dough is well combined, firm and not sticky.

  • Work the dough a little to make it smooth then divide it into 4 parts and roll them out very thinly on the countertop with a rolling pin, alternatively, you can use a pasta machine but I roll it by hand.

  • Cut the dough into diamonds or as you prefer, then heat the oil in the fryer or a deep pan and cook the chiacchiere, turning them for a few minutes, they should just turn golden.

  • Drain on kitchen paper and dust with powdered sugar.
