Ingredients

  • 1 cup all-purpose flour
  • 1 egg
  • 1 teaspoon baking powder
  • 1 tablespoon mandarin zest
  • 1/4 cup sugar
  • 1/4 cup extra virgin olive oil

Steps

  • Remove the outer part of the mandarin peel with a potato peeler to avoid taking the bitter white part.

  • Place the zest in a mixer with the sugar and grind.

  • Put the flour with the baking powder in a bowl or food processor, add the sugar with the zest, the egg, and the olive oil or seed oil if you prefer, then knead well and quickly.

  • Divide the dough into 12 pieces, form little rolls and place them on a baking sheet lined with paper; you can also use a cookie cutter, even a Christmas one if you prefer.

  • Bake at 350°F for 15 minutes.
