If I was craving something soft and fragrant, these mandarin donuts were the right answer. They are the classic breakfast leavened donuts, but with that citrus scent that makes them different from the usual donuts. Ideal for Carnival, but honestly perfect all year round, especially when you have juicy mandarins at home and want to use them smartly.

These soft mandarin donuts are great both freshly made and the next day, perfect for breakfast, snack or to serve on a tray when friends or kids come over. The taste is delicate, not overly sweet, and the dough remains soft thanks to the proper leavening. Ingredients

  • 4 cups flour (the one you usually use)
  • 1 egg
  • 3.5 tbsp butter
  • 1 tbsp sugar
  • 1 packet vanillin
  • 1/2 cup water
  • 1 mandarin zest
  • 1/2 cup milk
  • 1 cube fresh yeast

Steps

  • Pour the flour with sugar and vanillin into a bowl.

  • In a graduated jug, add the juice of 2 mandarins and water until you reach a total of 1/2 cup of liquid. (water + juice = 1/2 cup)

  • Crumble the yeast and dissolve it in the milk.

  • Add the butter in pieces to the dough, the egg, the mandarin zest and mix, finally add the yeast and mix, then the salt and knead well.

  • Make a ball and let it rest in a bowl covered with plastic wrap until it doubles, about 3-4 hours.

  • After rising, take the dough and divide it into 10 pieces or roll it out to a height of 1/8 inch and cut it with a round cutter and make a hole in the center.

  • Place them on pieces of parchment paper, cover everything and let rest 20-30 minutes.

  • Heat the oil in a tall pot or pan and drop the donuts with the paper that will detach immediately as soon as they enter the oil.

  • Cook turning them until golden, drain on kitchen paper and pass in granulated sugar or sprinkle with powdered sugar.
