Ingredients

  • 3.5 oz chocolate
  • 1.5 cups heavy cream
  • 1 tbsp mandarin paste
  • 1 egg yolk
  • 1 tbsp sugar
  • 2 tbsp chocolate

Steps

  • Prepare the mandarin paste HERE and set aside.

  • Whisk the egg yolk with sugar in a bain-marie, then let it cool, whip the cream and combine the mandarin paste with the yolk.

  • Whip everything with an electric mixer, then add chocolate chips or chocolate chunks and mix.

  • Melt the chocolate in a bain-marie and place it inside a silicone semi-sphere mold like this HERE and refrigerate for 15 minutes.

  • Then remove the mold from the fridge, pour half of the creamy mixture, add some mandarin paste, more cream, and freeze for 30 minutes.
