Steps
Beat the eggs with the sugar until they double in volume, add the flour with the baking powder gradually by hand, folding with a spatula, add the lemon zest and fold well.
Pour the mixture into a pan lined with parchment paper and form a rectangle of 8 inches x 12 inches, bake in a preheated oven at 392°F for 7 minutes.
Remove from oven and let cool slightly, then cut into 2-inch squares.
Peel the lemon without the white part and place it in a mixer, add the sugar and honey, then add the lemon segments without seeds and white part, only the fruit, and blend everything.
Beat the egg yolk with a hand whisk then move to the stovetop and continue whisking for a few minutes to pasteurize it.
