Ingredients
- 10 oz Potatoes
- 1 tbsp Canned cherry tomatoes (or fresh)
- 2 tbsps Black olives
- to taste Salted capers
- Half Onion
- Oregano
- Rosemary
Preparation
Peel the potatoes and cut them into chunks that are not too large and boil them for about ten minutes.
Oil a baking dish and place the potatoes in it.
Add the sliced onion, a few cherry tomatoes, fresh preferably when in season.
Add the olives, desalinated capers under running water, oregano, and rosemary.
Mix with a spoon, turn on the oven to 392°F and bake.
Bake for about 30 minutes, of course, check that the potatoes are cooked.
