The recipe for Mediterranean potatoes is perfect if you are looking for a tasty potato side dish, simple and affordable, also it can be cooked in a pan.

The perfect side dish for a simple burger or an oven-baked sea bream.

Mediterranean Baked or Pan-Fried Potatoes

Ingredients

  • 10 oz Potatoes
  • 1 tbsp Canned cherry tomatoes (or fresh)
  • 2 tbsps Black olives
  • to taste Salted capers
  • Half Onion
  • Oregano
  • Rosemary

Preparation

  • Peel the potatoes and cut them into chunks that are not too large and boil them for about ten minutes.

  • Oil a baking dish and place the potatoes in it.

  • Add the sliced onion, a few cherry tomatoes, fresh preferably when in season.

  • Add the olives, desalinated capers under running water, oregano, and rosemary.

  • Mix with a spoon, turn on the oven to 392°F and bake.

  • Bake for about 30 minutes, of course, check that the potatoes are cooked.

You can enrich this side dish with salted anchovies.

My potatoes are baked directly in the oven in this case, but the cooking times are extended a bit.
