Ingredients

  • 2 cups all-purpose flour

  • 3 1/2 tbsps extra virgin olive oil
  • 2 tsps vegetable oil
  • 7 oz mortadella with pistachios
  • 7 oz provola cheese
  • 1/2 tsp salt

Steps

  • Pour the flour into a bowl, add the salt, water, and oils.

  • Knead well, add a bit of flour if needed, roll out on the work surface and cut out 25 discs with a 2 3/4 inch mold or a glass.

  • Cook in a pan with a little oil, flipping them, or bake at 356°F for about 12 minutes.

  • Fill with provola and mortadella. I used small round slices and cut two from each slice.

  • Put back in the pan and cook with the lid closed for a few minutes.

  • Sprinkle with pistachio flour or granules before serving.
