The MOSTACCIOLI with COFFEE were born partly for fun and partly out of necessity (I craved Christmas sweets but had zero desire to leave the house). Usually, I make the classic Neapolitan mostaccioli with almonds, but this time I decided to give them a caffeinated twist: since you need energy at Christmas, let it come from sweets!
The aroma of coffee in the dough gives these soft mostaccioli an extra boost: they remain tasty, spicy, super aromatic, and most importantly, easy and quick. Additionally, thanks to the dark chocolate coating, they become even more irresistible. And, precisely because they are dairy-free in the dough, many love them even for breakfast… yes, I know, it’s not right, but every now and then it’s okay.
Of course, they are perfect for gifting: just put them in a transparent bag, a red ribbon, and voilà… Christmas gift ready!

Ingredients
- 1 3/4 cups flour (the one you usually use)
- 1 tablespoon unsweetened cocoa powder
- 1/3 cup sugar
- Half orange juice
- 3 1/3 tablespoons water
- 2 tablespoons apricot jam
- 1 teaspoon pisto
- 5 tablespoons coffee
- 1/2 cup almonds
- 7 oz chocolate
- 1/3 cup milk
Steps
Chop the almonds with a mixer and place them in a bowl.
Add the flour, sugar, juice from half an orange, coffee, cocoa, pisto, jam, water, or milk, all the ingredients, and mix well.
Roll out the dough on a floured surface and cut it with a 2.75-inch or 4-inch cutter, as you prefer, and place the cookies on the baking sheet.
Bake at 302°F for 15-20 minutes then let cool.
Melt the chocolate in a double boiler with milk or water and cover the cookies, let them dry well before serving.
