The recipe for mushroom and cherry tomatoes bread crostini is perfect if you are looking for a simple and yet tasty appetizer or finger food. I’ve used yellow piennolo cherry tomatoes, but common cherry tomatoes are fine too.
A very tasty dish that can be prepared in no time and even in advance. You can cook the bread at the moment and the mushrooms with tomatoes the day before, then dress everything at the time.

Ingredients
- 2 mushrooms (champignon)
- 12 cherry tomatoes (yellow piennolo)
- 6 slices baguette (sesame)
Steps
Wash the mushrooms thoroughly and slice them.
Cut the cherry tomatoes in half, put them in a pan with oil, add the mushrooms and cook on low heat with the lid closed.
Place the bread on the oven tray, oil it, and cook under the grill at 390°F (200°C) preheated for about 5 minutes, perfect the air fryer at 375°F (190°C) for 3-4 minutes.
Place the bread crostini on the serving plate and top with the mushrooms, add a sprinkle of parsley.
